In Sweden it is traditional to have waffles on Lady Day - a tradition born of poor pronunciation, or so I've been told.
So in honour of that tradition:
This is my favourite waffle recipe (mainly because it's simple and has never failed me once *knock, knock on wood*), and strangely I've never seen it in any cookery book. The main difference between this recipe and the "traditional" ones is the quantity of eggs, which makes this batter easier to fry.

Ingredients (UK measures)
2 large eggs
3 3/4 oz of melted butter or margarine
2 1/2 cups of milk*
2 3/4 cups of wheat flour
2 tbsp sugar
1 dspn baking powder
*you can pretty much use whatever milk
you like - cow, soya, oats, et cetera
Mix all ingredients in a bowl and let the mixture set for 30 minutes before frying. There is no need to butter the iron before pouring batter into it, but that is no reason to get sloppy: don't forget to whip the batter before pouring each waffle - baking powder has a tendency to sink.
